When you think about Vietnamese cuisine, pho is the dish that is likely to come to mind. The ubiquitous dish features tender meat, flavorful broth, and chewy noodles.
We didn’t manage to eat pho for most of our trip to Ho Chi Minh because we were so busy clearing other places off our bucket list. And there are only so many meals you can eat in a day!
Unfortunately (or fortunately?) we had a bad case of food poisoning from Pasteur Street Brewing Company on our last day in HCM. It messed with our appetite and desperately needed something hot & soupy to calm our digestive system.
Hence, the dish we sought out was none other than pho.
What to eat at Phở Thìn by SOL
We settled on Phở Thìn by SOL which we randomly found on Google Maps. It was relatively near our accommodation and not too far from the airport. This was pretty crucial because we were rushing to catch our flight after lunch.
The restaurant was very crowded during lunch time. It was packed with both locals & tourists. And as I would find out, rightly so.
Phở Thìn by SOL is the first pho restaurant system in Saigon to buy the authentic recipe from the renowned family-owned Pho Thin Lo Duc brand. It is a pretty heartwarming indicator that you’ll get decent pho even from a mass brand.
I’m not sure if it was because we were so swiped by the food poisoning that anything we ate afterwards felt amazing. But I was so blown away by the pho that I forgot how poor my appetite was just minutes ago!
This is pho as it should be: warm, comforting, with the right amount of tender beef to make a filling meal.
As with a lot of soup dishes, I would say that the soup stock is what makes or breaks the dish. Phở Thìn by SOL’s version features a rich and flavourful soup that’s more umami than salty.
Is Phở Thìn by SOL worth eating at?
I’m pretty sure that there are many small, local restaurants that sell amazing pho in Ho Chi Minh.
However, if you’re pressed for time and simply want a quick & good pho fix, Phở Thìn by SOL is the restaurant to go to.
